A diferencia de otras especies, su valor no radica en la madera sino en su fruto. \u201cEl producto que se consume es la pepita, el pi\u00f1\u00f3n blanco. Se utiliza mucho en gastronom\u00eda, en pasteler\u00eda y en recetas tradicionales como el pesto genov\u00e9s\u201d, detall\u00f3.<\/p>\n\n\n\n<p>Camporini logr\u00f3 incluso exportar producci\u00f3n a Europa, particularmente a Espa\u00f1a. Sin embargo, el proceso no es sencillo ni r\u00e1pido. \u201cDesde que se planta hasta que empieza a dar fruto pueden pasar entre 8 y 10 a\u00f1os. Y despu\u00e9s la pi\u00f1a tarda alrededor de dos a\u00f1os en desarrollarse completamente\u201d, indic\u00f3.<\/p>\n\n\n\n<p>La cosecha tambi\u00e9n tiene sus particularidades. Se realiza entre fines de oto\u00f1o y primavera, cuando la pi\u00f1a est\u00e1 madura pero a\u00fan cerrada. \u201cSe sube al \u00e1rbol, se bajan las pi\u00f1as, se dejan secar al sol para que se abran y luego se procesan para extraer la semilla. Es un trabajo bastante artesanal\u201d, describi\u00f3.<\/p>\n\n\n\n<p>En cuanto al rendimiento explic\u00f3 que no es elevado: \u201cDe unos 5.000 kilos de pi\u00f1as se pueden obtener aproximadamente 500 kilos de producto comestible\u201d.<\/p>\n\n\n\n<p>Actualmente el ingeniero trabaja en plantaciones en distintos puntos de la costa y en un proyecto m\u00e1s amplio en el partido de Coronel Dorrego, donde ya se implantaron grandes cantidades de esta especie. Tambi\u00e9n particip\u00f3 en forestaciones en Reta y otras localidades cercanas.<\/p>\n\n\n\n<p>M\u00e1s all\u00e1 de la exportaci\u00f3n Camporini ve potencial en el mercado interno. \u201cHoy en Argentina hay poco consumo, pero est\u00e1 creciendo. Muchos chefs ya se est\u00e1n interesando porque es un producto que generalmente se importa, cuando podr\u00eda producirse localmente\u201d, se\u00f1al\u00f3.<\/p>\n\n\n\n<p>En ese sentido destac\u00f3 la importancia de difundir su uso y valor. \u201cMuchas veces vemos la pi\u00f1a como algo sin importancia, hasta para prender fuego.
